Best thing to do would be get onto Pat at V6 Conversions and buy one of his kits.
I started with nothing and still have most of it left.

that sort of stuff can only be answered by an engineer.

generally you will need to upgrade the brakes to something with a ventilated front disc and possibly wiper upgrades and heater/demister etc ... as for the diff thats really up to you but i doubt a banjo would last long behind a v6, and i would suggest a commodore diff conversion or 9inch....

really though you'd be best to talk to an engineer who will be able to advise you what rules you need to comply with for him to give you an engineers certificate.

also have a browse through the My FB EK gallery, I have plenty of pics of my v6 conversion into fb ute there, also Malcolm has completed a supercharged v6 into an EK Sedan just to name a few, there will be plenty of info and pics in both of them to hopefully give you a bit more of an idea on what the run down is.
Regards,

Sammy.

what sammy said ring some engineers, i say some engineers as some are wakkers and want all sorts of weird stuff  i've seen commodore tanks used but you can use the stock tank also with some mods, banjo diff (stock but EJ-HR) will be ok if you treat it right, in NSW with engineers i've used you don't need vented discs just discs
