I would think option 2 ? the theory behind doing the doors is to stop the skin from "drumming" I thought , you don't need to completely cover the inside of the skin to achieve this, modern cars have a large section o the skin covered with deadener but not all of it .
I started with nothing and still have most of it left.

Modern cars also have relatively waterproof weatherstrip compared to FB EK. Suppose if you put plenty of rust prevention on first i would consider it.

In regards to Hemco retractable belts. I have contacted them and sent me some info regarding the reel size and position, my seats arent in though so i cant check if they will fit. Im hoping someone can assist and say yes?

I've got Hemco retractable reels in the front of my EK wagon. Fitted OK with the factory bench seat.

If your putting carpet in (which I'm against due to rusting) I'd paint at least 3 coats of POR15 on the floor.
I know rubber mats help rusting as well, but the smell of wet carpet.
As was said previously FB and EK's leak.

Your car you choice but personally I'd prefer the moulded rubber over carpet due to leaking but you can always put carpet mats in.
