Manifold gasket

I have had an inlet manifold leak which is noticable by a whistle when the engine is hot. I cant seem to pin point the source of the leak after several attempts. The engine is a red 6 with a 2 barrel 350 Holley.
I am fitting a new Holley 350 because the old one is shagged, I thought I would also replace the gasket on the inlet manifold to make sure the that isn't the source of the leak. When I bought the manifold gasket there were two available,
one was just the exhaust gasket and the other was a set. The "set" was a single gasket with one side metal the othe side plain gasket material. I would assume the metal side would go towards the engine and the plain gasket side would seal the manifold but it can only fit the other way. So is this the case or have I got it all wrong.

The one piece gasket can only go on one way so that would be correct.
The only thing I can think of is to make sure the face of the manifold is even .

Yes it can only fit one way so that's the way it's going. I will as you suggest check the manifold face for straightness, bang it on and see (listen) to how it goes.

Had a similar problem with a grey motor, used a high temp copper sealant fixed the problem.
